Özet

Crystallization limits flowability and creates serious challenges for industrial handling, pumping, and packaging. Therefore, decrystallization is an essential operation in honey processing. The aim of this study is to develop a computational model for the decrystallisation process of honey samples using microwave (MW) processing. Following the development of the mathematical model, experimental studies were carried out with crystallized samples processed at various MW heating conditions. This study demonstrates that microwave heating might offer a novel approach for decrystallization, and scale-up studies for industrial process conditions should be carried out for this purpose.
