Real-time measurement of complex permittivity of three wood samples (walnut, pine and sycamore) in a cylindrical cavity resonator is demonstrated. Samples freshly cut from tree branches are left inside the cavity to dry at room temperature for a course of several days, during which their moisture content (MC) monotonously decreases from around 50% to around 0%. Resonance frequency and quality factor are measured to extract complex permittivity, which is used to obtain permittivity variation with MC. The fact that the measurements are performed dynamically enables estimation of real-time drying regime and dielectric characterization of different wood species.
