The roots of cheese production in the Middle East go back to the depths of history. A great number of Middle Eastern cheese varieties with a wide range of sensory characteristics are available on global markets. The sensory properties of these cheeses are probably the most fundamental quality characteristics. It is not an easy task to standardise the sensory properties of artisanal cheeses since the cheesemaking practices and milk sources vary considerably from one region to another. The major sensory features of cheese varieties popular in the Middle East, the Balkans and North Africa, which have a common culture, are discussed in this chapter.
