Abstract

This research was carried out on the fruits of Siirt, Ohadi and Uzun cultivars located in the irrigated and non-irrigated pistachio orchards of Gaziantep Pistachio Research Institute in order to determine the effects of irrigation on protein, total fat and fatty acids in pistachio. Irrigation increased protein contents of Ohadi and Uzun cultivars whereas more pronounced differences were observed between the cultivars when irrigation was not performed. In terms of the amount of total fat and fatty acids, although the differences between cultivars was statistically significant, the effect of irrigation on the fatty acids in all three cultivars were mainly on oleic acid. It was observed that the amount of oleic acid was increased and the amount of linoleic acid was decreased in fruits of irrigated orchards.
