Özet

In an evaporation system, steam economy is a critical parameter that should be taken into consideration in regard to operation costs. To diminish operation costs, vapor recompression systems are being integrated into evaporator systems in food industry. Vapor recompression system is an energy-efficient process used in various industrial applications to recover and reuse heat from vapor stream. It utilizes the latent heat of the vapor and is not discarded. In this chapter, vapor recompression systems are described, and innovative approaches to increasing efficiency in the process are mentioned.
