Carotenoids are tetraterpenic organic pigments which are synthesized in plants and other photosynthetic organisms as well as in some non-photosynthetic molds and yeasts. These compounds exist in photosynthetic organisms and assign the colors of most fruits and flowers from yellow to red. Carotenoids can not be synthesized by animals and have to be provided through their diet. Carotenoids are commercially used as dietary supplements and food dyes. Especially, due to their antioxidant activities and therapeutical properties on chronical diseases, they are receiving more attention. In this review, structure, biosynthesis and effects on biological systems of carotenoids were summarized.
